  • 4 (6 oz) fresh salmon fillets
  • 1 bunch asparagus (approximately 12 oz)
  • 1 cup cherry tomatoes
  • 1 lemon (juiced and zested)
  • 2 tbsp extra virgin olive oil
  • 1 tsp garlic powder
  • 1 tsp dried thyme or rosemary
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Line a large baking sheet with parchment paper or foil.
  3. Pat the salmon fillets dry, place skin-side down on the baking sheet, and drizzle with olive oil. Season with garlic powder, thyme or rosemary, salt, and pepper.
  4. Arrange the asparagus and cherry tomatoes around the salmon. Squeeze half of the lemon juice over everything.
  5. Bake for 15-20 minutes until the salmon flakes easily with a fork and vegetables are tender.
  6. Finish by squeezing more lemon juice over the dish before serving.
