  • 1 lb pizza dough (store-bought or homemade)
  • 2 tbsp extra virgin olive oil
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1 cup bell peppers, diced (assorted colors)
  • 1/2 cup red onion, thinly sliced
  • 3/4 cup feta cheese, crumbled
  • 2 cups lettuce mix (romaine and arugula)
  • 1/4 cup balsamic vinaigrette

Instructions

  1. Preheat your oven to 475°F (245°C). Roll out the pizza dough on a floured surface to about 12 inches in diameter and place it on a pizza stone or baking sheet lined with parchment paper.
  2. Brush the rolled-out dough generously with olive oil. Bake for 10-12 minutes until golden brown and crispy.
  3. While the crust bakes, chop cherry tomatoes, cucumber, bell peppers, red onion, and lettuce mix into small pieces.
  4. In a large bowl, combine chopped veggies with crumbled feta cheese. Drizzle with balsamic vinaigrette and toss until well coated.
  5. Once the crust has cooled slightly, spread the vegetable mixture evenly over the top.
  6. Slice into desired portions and serve warm.
