  • 4 large flour tortillas
  • 1 cup black beans, rinsed and drained
  • 1 cup sweet corn (fresh or frozen)
  • 12 jalapeños, diced (adjust to taste)
  • 2 green onions, chopped
  • 1 cup shredded pepper jack cheese
  • ¼ cup fresh cilantro, chopped
  • 1 ripe avocado
  • 2 tbsp lime juice
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste
  • Oil for frying

Instructions

  1. Heat oil in a skillet over medium heat. Add black beans, corn, jalapeños, green onions, cumin, and chili powder. Cook until heated through.
  2. Stir in shredded cheese until melted. Remove from heat and let cool slightly.
  3. Place about two tablespoons of filling onto each tortilla. Fold sides tightly and roll snugly to seal.
  4. Heat oil in a deep pan over medium-high heat. Fry egg rolls until golden brown on all sides (about 3-4 minutes). Drain on paper towels.
  5. In a blender, combine avocado, cilantro, lime juice, salt, and pepper. Blend until smooth.
  6. Serve warm with the dipping sauce on the side.
