- 1 cup black beans, rinsed and drained

- 1–2 jalapeños, diced (adjust to taste)
- 2 green onions, chopped
- 1 cup shredded pepper jack cheese
- ¼ cup fresh cilantro, chopped
- 1 ripe avocado
- 2 tbsp lime juice
- 1 tsp cumin
- 1 tsp chili powder
- Salt and pepper to taste
- Oil for frying
Instructions
- Heat oil in a skillet over medium heat. Add black beans, corn, jalapeños, green onions, cumin, and chili powder. Cook until heated through.
- Stir in shredded cheese until melted. Remove from heat and let cool slightly.
- Place about two tablespoons of filling onto each tortilla. Fold sides tightly and roll snugly to seal.
- Heat oil in a deep pan over medium-high heat. Fry egg rolls until golden brown on all sides (about 3-4 minutes). Drain on paper towels.
- In a blender, combine avocado, cilantro, lime juice, salt, and pepper. Blend until smooth.
- Serve warm with the dipping sauce on the side.
