  • 4 large flour tortillas
  • 2 cups diced, peeled potatoes (about 2 medium Russets)
  • 1 cup shredded cheddar cheese
  • 1 small onion, diced
  • 1 tsp cumin
  • 1 tsp chili powder
  • 2 tbsp cooking oil (divided)

Instructions

  1. Boil diced potatoes in salted water until fork-tender, about 15-20 minutes. Drain and mash.
  2. Sauté diced onion in 1 tbsp oil over medium heat until translucent (5-7 minutes). Mix with mashed potatoes, spices, and half of the cheese.
  3. In a skillet, heat remaining oil over medium heat. Place one tortilla in the skillet, layer with potato mixture and remaining cheese, then top with another tortilla.
  4. Cook each side for 3-4 minutes until golden brown. Slice into wedges and serve hot.
