  • 2 cups cannellini or great northern beans, drained and rinsed
  • 4 cloves fresh garlic, minced
  • 4 cups vegetable broth
  • 2 cups fresh spinach or kale
  • 1 medium sweet onion, diced
  • 1 cup carrots, diced
  • 2 tbsp extra virgin olive oil
  • 2 tsp Italian seasoning
  • 2 tbsp lemon juice
  • Salt to taste

Instructions

  1. In a large pot over medium heat, add olive oil. Sauté diced onion and minced garlic until fragrant and translucent.
  2. Add diced carrots and drained beans; stir to combine and cook for about 5 minutes.
  3. Pour in vegetable broth and stir in Italian seasoning. Allow to simmer for 10 minutes.
  4. Stir in fresh greens and lemon juice; cook for an additional 2 minutes until greens are wilted.
  5. Taste the soup and adjust seasoning with salt or more lemon juice as needed before serving.
