- 2 medium sweet potatoes, diced (about 3 cups)
- 1 cup green or brown lentils, rinsed
- 1 yellow onion, chopped
- 3 cloves garlic, minced
- 1 bell pepper (any color), chopped
- 1 can (14.5 oz) diced tomatoes in juice
- 4 cups low-sodium vegetable broth
- 2 tsp ground cumin
- 2 tsp smoked paprika
- 2 tsp chili powder
- 2 tbsp olive oil
- Salt & pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat. Sauté onions and bell pepper until softened, about 5 minutes.
- Add minced garlic, cumin, paprika, and chili powder; cook for an additional 1-2 minutes until fragrant.
- Stir in diced sweet potatoes and lentils. Mix well before adding canned tomatoes.
- Pour in vegetable broth and bring to a simmer. Reduce heat to low and cook uncovered for 25-30 minutes until sweet potatoes are tender.
- Taste and adjust seasoning with salt and pepper if needed.
- Serve warm, garnished with fresh cilantro or avocado if desired.
