Description

Sweet Potato and Lentil Chili is a delightful vegan dish that combines the natural sweetness of sweet potatoes with hearty lentils, creating a satisfying and flavorful meal. This chili is wonderfully aromatic, filled with vibrant colors, and perfect for cozy evenings or gatherings.


Ingredients

  • 2 medium sweet potatoes, diced (about 3 cups)
  • 1 cup green or brown lentils, rinsed
  • 1 yellow onion, chopped
  • 3 cloves garlic, minced
  • 1 bell pepper (any color), chopped
  • 1 can (14.5 oz) diced tomatoes in juice
  • 4 cups low-sodium vegetable broth
  • 2 tsp ground cumin
  • 2 tsp smoked paprika
  • 2 tsp chili powder
  • 2 tbsp olive oil
  • Salt & pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté onions and bell pepper until softened, about 5 minutes.
  2. Add minced garlic, cumin, paprika, and chili powder; cook for an additional 1-2 minutes until fragrant.
  3. Stir in diced sweet potatoes and lentils. Mix well before adding canned tomatoes.
  4. Pour in vegetable broth and bring to a simmer. Reduce heat to low and cook uncovered for 25-30 minutes until sweet potatoes are tender.
  5. Taste and adjust seasoning with salt and pepper if needed.
  6. Serve warm, garnished with fresh cilantro or avocado if desired.
