  • 3 medium Yukon Gold potatoes, diced
  • 1 medium yellow onion, chopped
  • 2 medium carrots, sliced
  • 2 stalks celery, chopped
  • 4 cloves garlic, minced
  • 4 cups low-sodium chicken or vegetable broth
  • 2 cups fresh spinach or kale
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. Prepare your ingredients: Wash and chop the potatoes, carrots, celery, and onion.
  2. Sauté the aromatics: In a large pot over medium heat, add a splash of oil. Sauté the onion and garlic until translucent (about 3-5 minutes).

  6. Finish & serve: Stir in spinach or kale until wilted (about 2-3 minutes). Serve hot with crusty bread.
