Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 can (13.5 oz) full-fat coconut milk
  • 1/2 cup natural peanut butter
  • 2 tsp fresh ginger, grated
  • 2 cups mixed bell peppers and carrots, chopped
  • 4 cups low-sodium chicken broth
  • 2 tbsp low-sodium soy sauce
  • Juice of 1 lime
  • 1/2 tsp chili flakes (optional)
  • Fresh cilantro for garnish

Instructions

  1. Set your crockpot to low heat.
  2. Add chicken breasts, coconut milk, peanut butter, ginger, chopped vegetables, chicken broth, soy sauce, lime juice, and optional chili flakes into the crockpot.
  3. Stir well to combine all ingredients.
  4. Cover and cook on low for 6 hours or high for 3 hours until the chicken is easily shredded with a fork.
  5. Shred the chicken using two forks and return it to the soup.
  6. Taste and adjust seasoning as needed. Serve hot garnished with fresh cilantro.
