Ingredients

  • 1 can (15 oz) chickpeas, drained and rinsed
  • 2 medium carrots, diced
  • 2 stalks celery, chopped
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp coriander
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups low-sodium vegetable broth
  • 2 cups fresh spinach or kale
  • 2 tbsp olive oil

Instructions

  1. Heat olive oil in a skillet over medium heat. Sauté onions until translucent, then add garlic and cook briefly.
  2. Transfer sautéed onions and garlic to the crockpot. Add carrots, celery, and chickpeas; stir to combine.
  3. Pour in diced tomatoes with juices and sprinkle cumin and coriander on top. Add vegetable broth until ingredients are submerged.
  4. Set crockpot on low for 6-8 hours or high for 4 hours.
  5. About 30 minutes before serving, stir in spinach or kale until wilted.
  6. Serve hot with bread or over rice.
