Instructions
- Chop the chicken into bite-sized pieces and prepare all vegetables.
- In a skillet over medium heat, sauté onion and garlic in olive oil until translucent (3-4 minutes).
- Transfer the sautéed mixture to the crockpot and add chicken, carrots, celery, thyme, salt, pepper, and chicken broth.
- Cover and cook on low for 6-7 hours or high for 3-4 hours until the chicken is tender.
- About 30 minutes before serving, prepare dumpling dough according to package instructions or your homemade recipe.
- Drop spoonfuls of dumpling dough onto the bubbling chicken mixture. Cover and cook on high for another 30 minutes until dumplings are fluffy.
