  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 cups carrots, chopped
  • 2 cups celery, chopped
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 2 cups dumpling mix (or homemade: 2 cups flour, 1 tbsp baking powder, 1 cup milk, 4 tbsp butter)
  • 2 tsp fresh thyme, chopped
  • 2 tsp fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  1. Chop the chicken into bite-sized pieces and prepare all vegetables.
  2. In a skillet over medium heat, sauté onion and garlic in olive oil until translucent (3-4 minutes).
  3. Transfer the sautéed mixture to the crockpot and add chicken, carrots, celery, thyme, salt, pepper, and chicken broth.
  4. Cover and cook on low for 6-7 hours or high for 3-4 hours until the chicken is tender.
  5. About 30 minutes before serving, prepare dumpling dough according to package instructions or your homemade recipe.
  6. Drop spoonfuls of dumpling dough onto the bubbling chicken mixture. Cover and cook on high for another 30 minutes until dumplings are fluffy.
