- 1 lb ground beef or turkey
- 1 can (15 oz) fire-roasted tomatoes
- 1 can (15 oz) black beans, rinsed
- 2 tsp chili powder
- 1 cup bell peppers, chopped
- 1 medium onion, chopped
- 1 cup fine cornmeal
- 1 cup whole milk (or plant-based alternative)
- 1 cup shredded cheddar cheese
- 2 tsp baking powder
- ½ cup sour cream or Greek yogurt
Instructions
- Preheat oven to 375°F (190°C).
- In a skillet over medium heat, sauté chopped onions and bell peppers in olive oil until soft (about 5 minutes). Add ground meat and brown.
