  • 1 can (15 oz) fire-roasted tomatoes
  • 1 can (15 oz) black beans, rinsed
  • 2 tsp chili powder
  • 1 cup bell peppers, chopped
  • 1 medium onion, chopped
  • 1 cup fine cornmeal
  • 1 cup whole milk (or plant-based alternative)
  • 1 cup shredded cheddar cheese
  • 2 tsp baking powder
  • ½ cup sour cream or Greek yogurt

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a skillet over medium heat, sauté chopped onions and bell peppers in olive oil until soft (about 5 minutes). Add ground meat and brown.
  3. Stir in canned tomatoes, rinsed beans, chili powder, salt, and pepper. Simmer for 10 minutes.
  4. In a separate bowl, mix cornmeal, baking powder, milk, sour cream, and cheese until smooth.
