- 2 bay leaves

Instructions
- Sauté onions and garlic in a skillet over medium heat until translucent.
- Transfer sautéed mixture to the crockpot; add chicken breasts, rice, carrots, celery, thyme, bay leaves, salt, pepper, and chicken broth.
- Cover and cook on low for 6-8 hours or high for 4-5 hours.
- Once cooked through (chicken at least 165°F), shred the chicken with two forks and return it to the soup.
