  • 4 boneless, skinless chicken breasts
  • 1 cup long-grain white rice
  • 2 medium carrots, chopped
  • 2 celery stalks, chopped
  • 1 medium onion, diced
  • 3 garlic cloves, minced
  • 6 cups low-sodium chicken broth
  • 1 tsp dried thyme
  • 2 bay leaves
  • Salt and pepper to taste
  • 2 tbsp fresh parsley, chopped

Instructions

  1. Sauté onions and garlic in a skillet over medium heat until translucent.
  2. Transfer sautéed mixture to the crockpot; add chicken breasts, rice, carrots, celery, thyme, bay leaves, salt, pepper, and chicken broth.
  3. Cover and cook on low for 6-8 hours or high for 4-5 hours.
  4. Once cooked through (chicken at least 165°F), shred the chicken with two forks and return it to the soup.
  5. Stir in fresh parsley before serving.
