  • 34 boneless, skinless chicken breasts
  • 1 cup long-grain rice
  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 1 medium sweet onion, chopped
  • 3 garlic cloves, minced
  • 6 cups low-sodium chicken broth
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Gather all ingredients and prepare vegetables by chopping the carrots, celery, onion, and garlic.
  2. Layer chopped vegetables at the bottom of the crockpot. Place whole chicken breasts on top.
  3. Pour in the chicken broth until it covers the ingredients. Sprinkle thyme, oregano, salt, and pepper evenly.
  4. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  5. About 30 minutes before serving, stir in the rice.
  6. Once cooked through, shred the chicken inside the pot with forks. Stir well and serve hot; garnish with parsley if desired.
