- 1 cup bell peppers (diced)
- 4 green onions (sliced)

- 2 tbsp soy sauce
- 2 tbsp vegetable oil
Instructions
- Heat vegetable oil in a large skillet over medium heat. Sauté shrimp until pink and opaque, about 3-4 minutes. Remove and set aside.
- In the same skillet, add garlic and bell peppers; sauté for 2-3 minutes until softened.
- Stir in cooked rice, Cajun seasoning, and soy sauce. Mix well to coat the rice evenly; cook for about 5 minutes.
- Push rice to one side of the skillet; crack eggs on the other side. Scramble eggs until cooked through, then combine everything in the skillet for another 2-3 minutes.
- Garnish with sliced green onions and serve warm.
