  • 1 lb shrimp (fresh or thawed)
  • 3 cups cooked rice (preferably cold)
  • 2 tbsp Cajun seasoning
  • 1 cup bell peppers (diced)
  • 4 green onions (sliced)
  • 3 cloves garlic (minced)
  • 2 large eggs
  • 2 tbsp soy sauce
  • 2 tbsp vegetable oil

Instructions

  1. Heat vegetable oil in a large skillet over medium heat. Sauté shrimp until pink and opaque, about 3-4 minutes. Remove and set aside.
  2. In the same skillet, add garlic and bell peppers; sauté for 2-3 minutes until softened.
  3. Stir in cooked rice, Cajun seasoning, and soy sauce. Mix well to coat the rice evenly; cook for about 5 minutes.
  4. Push rice to one side of the skillet; crack eggs on the other side. Scramble eggs until cooked through, then combine everything in the skillet for another 2-3 minutes.
  5. Garnish with sliced green onions and serve warm.
