Ingredients
Scale
- 4 boneless, skinless chicken breasts (1.5 lbs)
- 1/3 cup extra virgin olive oil
- 1/4 cup fresh lemon juice (about 2 lemons)
- 4 garlic cloves, minced
- 2 tsp ground cumin
- 2 tsp smoked paprika
- Salt and pepper to taste
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh mint, chopped
- Zest of 1 lemon
- 2 tbsp red wine vinegar
- 1 tbsp honey
- 1/3 cup extra virgin olive oil
Instructions
- Marinate the Chicken: In a large bowl, whisk together olive oil, lemon juice, garlic, cumin, paprika, salt, and pepper. Add chicken breasts and coat well. Cover and refrigerate for at least 30 minutes or up to 4 hours.
- Prepare Your Grill: Preheat your grill to medium-high heat (375°F / 190°C) and clean the grates.
- Sear the Chicken: Remove chicken from marinade and shake off excess liquid. Grill for about 6-7 minutes on each side until charred and cooked through (internal temperature should reach 165°F / 75°C).
- Create the Vinaigrette: In a small bowl, combine lemon zest, red wine vinegar, honey, chopped herbs, salt, pepper, and remaining olive oil. Whisk until emulsified.
- Rest Before Serving: Let chicken rest for 5 minutes before slicing against the grain. Drizzle with vinaigrette just before serving.
