  • 3 boneless, skinless chicken breasts (about 1 lb)
  • 8 flour tortillas (or corn tortillas)
  • 2 cups grated cheddar cheese
  • 1 cup enchilada sauce (store-bought or homemade)
  • 1 medium onion (finely chopped)
  • 1 can (15 oz) black beans (rinsed and drained)
  • ¼ cup fresh cilantro (chopped)
  • ½ cup sour cream

Instructions

  1. Preheat the oven to 375°F (190°C) and grease a large baking dish.
  2. Cook chicken in a skillet over medium heat until golden brown, about 6 minutes per side; then shred.
  3. Sauté onions in the same skillet until translucent. Combine with shredded chicken, black beans, half of the cheese, and half of the enchilada sauce in a bowl.
  4. Lay each tortilla flat, spoon the chicken mixture onto one side, roll tightly, and place seam-side down in the baking dish.
  5. Pour remaining enchilada sauce over the rolled tortillas and top with remaining cheese. Bake for 20 minutes until bubbly and golden.
  6. Serve hot with chopped cilantro and sour cream.
