  • 2 cups elbow macaroni
  • 2 cups sharp cheddar cheese, shredded
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 (14.5 oz) can diced tomatoes
  • 2 cups beef or vegetable broth
  • 2 tbsp ketchup
  • 1 tbsp mustard
  • 1 tsp smoked paprika
  • Salt and pepper to taste

Instructions

  1. In a large pot over medium heat, brown the ground beef, breaking it apart as it cooks.
  2. Add the chopped onion and minced garlic; sauté until the onion is translucent.
  3. Stir in the elbow macaroni, diced tomatoes, broth, ketchup, mustard, paprika, salt, and pepper until well combined.
  4. Bring the mixture to a boil; then cover and reduce heat to low. Simmer for about 10-12 minutes until macaroni is al dente.
  5. Remove from heat and stir in the shredded cheddar cheese until melted. Serve warm.
