  • 1 whole turkey (1214 lbs)
  • 1 cup unsalted butter (softened)
  • 3 tbsp fresh rosemary (chopped)
  • 3 tbsp fresh thyme (chopped)
  • 3 tbsp fresh sage (chopped)
  • 8 cloves garlic (crushed)
  • 1 lemon (halved)
  • 1 large onion (quartered)
  • 2 cups chicken or vegetable broth
  • Salt and pepper to taste

Instructions

  1. 1. Preheat your oven to 325°F (165°C). Remove giblets from the turkey and pat it dry with paper towels.
  2. 2. Rub softened butter all over the turkey, including under the skin. Season generously with salt and pepper.
  3. 3. Stuff the cavity with quartered onions, halved lemons, crushed garlic cloves, and fresh herbs.
  4. 4. In a roasting pan, pour in chicken or vegetable broth to create steam during roasting. Place a rack inside the pan.
  5. 5. Roast the turkey for approximately 13-15 minutes per pound. Baste every 30 minutes until golden brown and cooked through.
  6. 6. Once cooked (internal temp of 165°F / 74°C), let the turkey rest for 20-30 minutes before carving.
