Ingredients
- 1 whole turkey (12–14 lbs)
- 1 cup unsalted butter (softened)
- 3 tbsp fresh rosemary (chopped)
- 3 tbsp fresh thyme (chopped)
- 3 tbsp fresh sage (chopped)
- 8 cloves garlic (crushed)
- 1 lemon (halved)
- 1 large onion (quartered)
- 2 cups chicken or vegetable broth
- Salt and pepper to taste
Instructions
- 1. Preheat your oven to 325°F (165°C). Remove giblets from the turkey and pat it dry with paper towels.
- 2. Rub softened butter all over the turkey, including under the skin. Season generously with salt and pepper.
- 3. Stuff the cavity with quartered onions, halved lemons, crushed garlic cloves, and fresh herbs.
- 4. In a roasting pan, pour in chicken or vegetable broth to create steam during roasting. Place a rack inside the pan.
- 5. Roast the turkey for approximately 13-15 minutes per pound. Baste every 30 minutes until golden brown and cooked through.
- 6. Once cooked (internal temp of 165°F / 74°C), let the turkey rest for 20-30 minutes before carving.
