- 1 cup unsalted butter, softened
- 3 tablespoons fresh rosemary, chopped
- 3 tablespoons fresh thyme, chopped
- 1 large sweet onion, quartered
- 1 lemon, halved
- 8 cloves garlic
- 2 cups chicken broth
- Salt and pepper to taste
Instructions
- Preheat oven to 325°F (165°C). Remove giblets from the turkey.
- Pat turkey dry and rub softened butter over the skin, including under the skin. Season generously with salt and pepper.
- Mix chopped herbs and minced garlic into the remaining butter. Spread this mixture under the skin.
- Stuff cavity with quartered onion, lemon halves, and additional herbs if desired.
- Place turkey breast-side up on a rack in a roasting pan; pour chicken broth into the pan.
- Roast uncovered until a meat thermometer reads 165°F (74°C), basting with pan juices every 30 minutes.
- Let rest for 30 minutes before carving.
