  • 2 lbs boneless, skinless chicken thighs
  • 2 fresh oranges (juiced and zested)
  • 1/4 cup low-sodium soy sauce
  • 1/4 cup honey
  • 4 garlic cloves (minced)
  • 1 tsp fresh ginger (grated)
  • 1 tbsp sesame oil
  • 1 tbsp cornstarch
  • 2 green onions (sliced for garnish)

Instructions

  1. In a large bowl, combine orange juice, zest, soy sauce, honey, garlic, ginger, and sesame oil. Add chicken thighs and marinate for at least 30 minutes.
  2. Preheat oven to 400°F (200°C) and prepare a baking dish with nonstick spray.
  3. Arrange marinated chicken in the baking dish and pour any remaining marinade over the top.
  4. Bake for 35-40 minutes until golden brown and the internal temperature reaches at least 165°F (74°C).
  5. Sprinkle with green onions before serving hot with rice or noodles.
