  • 1/2 cup unsweetened cocoa powder
  • 1 tsp baking powder
  • 1 cup granulated sugar
  • 2 large eggs
  • 1/2 cup whole milk (or almond/oat milk)
  • 1/4 cup unsalted butter, melted
  • 1 tsp vanilla extract
  • 1/3 cup raspberry jam
  • Red food coloring (to preference)
  • 8 oz cream cheese (for frosting)
  • 2 cups powdered sugar

Instructions

  1. Preheat oven to 350°F (175°C) and line a cupcake pan with paper liners.
  2. In a bowl, whisk together flour, cocoa powder, baking powder, and sugar.
  3. In another bowl, mix eggs, milk, melted butter, and vanilla; combine with dry ingredients until smooth.
  4. Fill cupcake liners two-thirds full with batter and bake for 18-20 minutes; let cool completely.
  5. Core out the center of each cupcake and fill generously with raspberry jam.
  6. Beat cream cheese and powdered sugar together; add red food coloring to achieve desired hue.
  7. Pipe frosting onto cupcakes and serve.
