  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 3 cloves fresh garlic, minced
  • 1 medium onion, chopped
  • 2 stalks celery, diced
  • 1 cup bell peppers, diced (mixed colors)
  • 1 cup carrots, sliced
  • 1 can (14.5 oz) diced tomatoes in juice
  • 4 cups chicken broth
  • 2 tbsp Cajun seasoning
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. In a large pot over medium heat, drizzle olive oil and sauté onions, garlic, celery, and bell peppers until softened (about 5 minutes).
  2. Add diced chicken breasts and sliced carrots; cook until the chicken is browned (around 5 minutes).
  3. Pour in canned tomatoes (with juice) and chicken broth; bring to a boil before reducing heat to simmer.
  4. Stir in Cajun seasoning along with salt and pepper; let simmer for 20-25 minutes until the chicken is fully cooked.
  5. Shred the chicken using two forks and return it to the pot; stir well before serving hot.
