  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 3 cloves fresh garlic, minced
  • 1 large yellow onion, chopped
  • 2 bell peppers (any color), chopped
  • 2 cups low-sodium chicken broth
  • 2 tsp smoked paprika
  • 1 tsp Italian herbs (basil and oregano)
  • Salt and pepper to taste
  • 1 tbsp olive oil (optional for sautéing)

Instructions

  1. Rinse chicken under cold water and pat dry.
  2. Chop onions and bell peppers into bite-sized pieces.
  3. (Optional) In a skillet over medium heat, sauté onions in olive oil until translucent (about 5 minutes). Add minced garlic and sauté for an additional minute.
  4. Place chicken at the bottom of the slow cooker and layer sautéed onions and garlic on top.
  5. Add bell peppers on top of the chicken and sprinkle with paprika, Italian herbs, salt, and pepper.
  6. Pour low-sodium chicken broth around the edges of the slow cooker.
  7. Cover and cook on low for 6-8 hours or high for 3-4 hours.
