  • 1/2 cup balsamic vinegar
  • 1 cup vegetable orzo
  • 2 cups fresh spinach
  • 1 cup cherry tomatoes, halved
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. In a bowl, mix balsamic vinegar, olive oil, salt, and pepper. Add chicken and let marinate for at least 15 minutes.
  2. Heat olive oil in a skillet over medium heat. Sauté garlic until fragrant, then add cherry tomatoes and spinach until softened.
  3. Push veggies aside and add marinated chicken to the skillet. Cook each side for about 5-7 minutes until golden brown.
  4. Boil water in a separate pot, add vegetable orzo, and cook according to package instructions until al dente. Drain.
  5. Slice cooked chicken and mix it back into the skillet with veggies. Stir in cooked orzo until everything is well-coated in the glaze.
