- 8 oz Halloumi cheese
- 4 cups mixed greens
- 1 cup cherry tomatoes, halved
- 1 cucumber, sliced
- 2 tbsp extra virgin olive oil
- 2 tbsp fresh lemon juice

- Salt and pepper to taste
Instructions
- Wash mixed greens thoroughly and dry them using a salad spinner or towel. Slice cucumber into half-moons and halve cherry tomatoes.
- Preheat grill or grill pan over medium heat. Cut Halloumi into thick slices (½ inch).
