  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 stalks fresh lemongrass, finely chopped
  • 4 garlic cloves, minced
  • 1-inch piece fresh ginger, peeled and chopped
  • 4 tbsp low-sodium soy sauce
  • 2 tbsp fish sauce
  • 1 tbsp brown sugar
  • 2 tbsp vegetable oil
  • Juice of 1 lime (about 2 tbsp)
  • Pinch of chili flakes (optional)

Instructions

  1. Prepare the marinade by mixing lemongrass, garlic, ginger, soy sauce, fish sauce, brown sugar, lime juice, and chili flakes in a bowl.
  2. Cut the chicken into bite-sized pieces and add to the marinade. Toss to coat and let sit for at least 30 minutes.
  3. Heat vegetable oil in a skillet over medium-high heat until shimmering.
  4. Add marinated chicken in a single layer; cook for 5-7 minutes until golden on one side before flipping.
  5. Stir in any remaining marinade and cook for an additional 2 minutes until fragrant.
  6. Serve hot, garnished with fresh herbs alongside jasmine rice or noodles.
