Ingredients

  • 4 boneless, skinless chicken breasts (about 680g)
  • 1 cup fresh blueberries (150g)
  • 1 cup crumbled feta cheese (150g)
  • 4 cups mixed greens (120g)
  • ½ medium red onion, thinly sliced
  • ¼ cup balsamic vinaigrette (60ml)
  • 2 tablespoons extra virgin olive oil (30ml)
  • Salt and pepper to taste

Instructions

  1. Preheat grill or skillet over medium-high heat. Season chicken with salt and pepper, then grill for 6-7 minutes per side until cooked through.
  2. Rinse the mixed greens under cold water and place them in a large salad bowl.
  3. Slice the grilled chicken into bite-sized pieces and add it to the greens along with blueberries and crumbled feta.
  4. Sprinkle sliced red onion over the salad. Soak in cold water first if you prefer milder onions.
  5. Drizzle balsamic vinaigrette over the salad just before serving, then gently toss to combine.
