- 4 medium Yukon Gold potatoes, diced

- 4 cups low-sodium beef broth

- 1 tsp dried thyme
- 2 bay leaves
- 2 tbsp olive oil

Instructions
- Heat olive oil in a large pot over medium heat until shimmering.
- Season beef cubes with salt and pepper. Brown the beef in batches until golden brown on all sides. Remove and set aside.

- Deglaze with red wine, scraping up browned bits from the bottom of the pot.
- Return beef to the pot and pour in beef broth.
