  • 2 lbs beef chuck roast, cut into 1-inch cubes
  • 3 medium carrots, chopped
  • 4 medium Yukon Gold potatoes, diced
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 4 cups low-sodium beef broth
  • 1 cup red wine
  • 1 tsp dried thyme
  • 2 bay leaves
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat until shimmering.
  2. Season beef cubes with salt and pepper. Brown the beef in batches until golden brown on all sides. Remove and set aside.
  3. In the same pot, sauté onions and garlic until translucent and fragrant.
  4. Add carrots and potatoes along with thyme and bay leaves; stir for about 2 minutes.
  5. Deglaze with red wine, scraping up browned bits from the bottom of the pot.
  6. Return beef to the pot and pour in beef broth.
  7. Bring to a gentle boil, then reduce heat to low and cover tightly. Simmer for 1.5 to 2 hours until beef is tender.
