Description

  • 3 medium zucchinis (about 2 cups shredded)
  • 1 lb lean ground turkey or beef
  • 2 cups marinara sauce
  • 2 cups shredded mozzarella cheese
  • 2 tsp Italian seasoning
  • 3 large eggs
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. In a skillet over medium heat, sauté diced onion and minced garlic until fragrant (about 3–4 minutes).
  3. Add ground turkey or beef to the skillet; cook until browned (5–7 minutes), breaking it up with a spatula.
  4. In a large bowl, mix together the cooked meat mixture, shredded zucchini, marinara sauce, Italian seasoning, salt, pepper, and eggs until well combined.
  5. Layer half of the zucchini mixture into the greased baking dish, followed by half of the mozzarella cheese. Add the remaining zucchini mixture and top with the rest of the cheese.
  6. Bake for 30–35 minutes until bubbly and golden brown.
