  • 2 medium zucchinis, sliced
  • 1 lb lean ground beef or sausage
  • 1 cup marinara sauce
  • 2 cups shredded mozzarella cheese
  • 1 tsp Italian seasoning
  • 3 large eggs
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 cup bell peppers, diced (red and yellow)
  • ½ cup panko breadcrumbs (optional)

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly grease a baking dish.
  2. In a skillet over medium heat, sauté the chopped onion until translucent. Add the ground meat and cook until browned.
  3. Stir in the zucchini and bell peppers; cook until slightly tender.
  4. Remove from heat and mix in marinara sauce and Italian seasoning until well combined.
  5. In a separate bowl, beat the eggs and mix in shredded cheese. Combine this mixture with the meat and vegetables.
  6. Transfer everything to the greased baking dish. If using panko breadcrumbs, sprinkle them on top before baking.
  7. Bake uncovered for 30-35 minutes or until bubbly and golden brown.
