  • 1 cup diced mango (fresh or frozen)
  • 1/3 cup honey or maple syrup
  • 1/4 cup melted coconut oil
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/4 cup chopped nuts or seeds (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8-inch baking dish with parchment paper.
  2. In a large bowl, mix rolled oats, baking powder, and salt until well combined.
  3. In another bowl, whisk together melted coconut oil, honey (or maple syrup), eggs, vanilla extract, and diced mango until smooth.
  4. Pour the wet mixture into the dry ingredients and gently fold until just combined.
  5. Spread the batter evenly in the prepared dish and press down lightly.
  6. Bake for 25-30 minutes or until golden brown on top. Let cool before cutting into squares.
