  • 1 cup fresh breadcrumbs
  • 1 large egg

  • 2 cloves garlic, minced
  • 1/4 tsp nutmeg
  • 2 tbsp fresh dill (or 1 tbsp dried dill)
  • 4 cups low-sodium vegetable broth
  • 1 cup heavy cream (or half-and-half)
  • 2 medium carrots, diced
  • 2 medium potatoes, diced

Instructions

  1. In a mixing bowl, combine ground beef, breadcrumbs, egg, onion, garlic, nutmeg, and salt. Mix gently.
  2. In a large pot over medium heat, sauté diced carrots in oil until softened. Add chopped potatoes and cook until slightly browned.
  3. Gradually pour in vegetable broth while stirring. Bring to a simmer and add the meatballs carefully.
