  • 1 medium onion, chopped
  • 2 cups cooked rice (white or brown)
  • 3 bell peppers (red, yellow, or green), chopped
  • 1 can (14.5 oz) diced tomatoes (preferably fire-roasted)
  • 1 cup shredded mozzarella cheese (or cheddar)
  • 2 tsp Italian seasoning
  • 1 tsp paprika
  • 1 cup low-sodium chicken broth
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat and sauté chopped onions until translucent.
  3. Add ground beef; cook until browned and season with salt, pepper, and Italian seasoning.
  4. Stir in cooked rice and diced tomatoes; mix well.
  5. Add chopped bell peppers and chicken broth; simmer for about 10 minutes.
  6. Transfer the mixture into a greased baking dish. Top with shredded cheese.
  7. Cover with foil and bake for 25 minutes. Remove foil and bake an additional 10 minutes until cheese is bubbly.
