Description

  • 1 cup graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1 cup granulated sugar (divided)
  • 2 cups fresh strawberries, pureed
  • 1/3 cup freshly squeezed lemon juice
  • 3 large eggs
  • 1 tsp baking powder

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8-inch baking dish with parchment paper.
  2. In a bowl, mix graham cracker crumbs, melted butter, and 1/4 cup sugar until it resembles wet sand. Press into the bottom of the prepared dish.
  3. Bake the crust for 10 minutes until golden brown.
  4. In another bowl, blend pureed strawberries, lemon juice, remaining sugar, eggs, and baking powder until smooth.
  5. Pour the strawberry mixture over the baked crust and bake for an additional 25-30 minutes until set but slightly jiggles in the center.
  6. Allow to cool completely before slicing into bars. Dust with powdered sugar before serving.
