- 1/2 cup unsalted butter, melted
- 1 cup granulated sugar (divided)
- 2 cups fresh strawberries, pureed
- 1/3 cup freshly squeezed lemon juice
- 3 large eggs
- 1 tsp baking powder
Instructions
- Preheat your oven to 350°F (175°C) and line an 8×8-inch baking dish with parchment paper.
- In a bowl, mix graham cracker crumbs, melted butter, and 1/4 cup sugar until it resembles wet sand. Press into the bottom of the prepared dish.
- Bake the crust for 10 minutes until golden brown.
- In another bowl, blend pureed strawberries, lemon juice, remaining sugar, eggs, and baking powder until smooth.
- Pour the strawberry mixture over the baked crust and bake for an additional 25-30 minutes until set but slightly jiggles in the center.
- Allow to cool completely before slicing into bars. Dust with powdered sugar before serving.
