Instructions

  1. Preheat oven to 350°F (175°C) and grease an 8×8-inch baking pan.
  2. In a bowl, combine melted butter, granulated sugar, flour, and a pinch of salt until crumbly. Press firmly into the prepared pan.
  3. Bake crust for 15 minutes or until lightly golden.
  4. Meanwhile, whisk together eggs, sugar, lemon juice, and zest until smooth.
  5. Gently fold in diced strawberries.
  6. Pour filling over the pre-baked crust and return to the oven for 20-25 minutes until set.
  7. Allow to cool completely before dusting with powdered sugar and slicing into squares.
