  • 1 cup fresh strawberries, diced
  • 2 cups all-purpose flour
  • 3/4 cup granulated sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 2 large eggs, room temperature
  • 1 cup whole milk
  • 1/2 cup cream cheese, softened
  • 1 tsp vanilla extract
  • 1/2 cup unsalted butter, melted

Instructions

  1. Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together flour, sugar, baking powder, and salt.
  3. In another bowl, beat eggs and mix in milk and vanilla extract. Stir in melted butter until combined.
  4. Gently fold diced strawberries into the wet mixture. Add dollops of cream cheese before lightly folding.
  5. Fill each muffin liner about three-quarters full with batter. Bake for 18-22 minutes until golden brown and a toothpick comes out clean.
  6. Allow muffins to cool slightly in the pan before transferring them to a wire rack.
