  • 1 cup diced fresh bell peppers (mixed colors)
  • 1 can (15 oz) black beans, rinsed
  • 1 cup corn kernels (fresh or frozen)
  • 1 cup sour cream
  • 2 cups shredded cheese (cheddar and Monterey Jack mix)
  • 2 tsp cumin
  • 2 tsp chili powder
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C) and grease a large casserole dish.
  2. In a skillet over medium heat, add 2 tsp olive oil and sauté diced chicken until golden brown and fully cooked (7-10 minutes).
  3. Add chopped bell peppers, black beans, corn, cumin, chili powder, salt, and pepper to the skillet; cook for an additional 5 minutes until peppers soften.
  4. Stir in sour cream until well combined.
  5. Transfer mixture into the greased baking dish; top generously with shredded cheese.
  6. Bake for 25-30 minutes until bubbly and golden on top.
