  • 4 boneless, skinless chicken breasts
  • 1 can (13.5 oz) full-fat coconut milk
  • 2 tbsp curry powder
  • 5 garlic cloves, minced
  • 1 tbsp fresh ginger, grated
  • 1 cup low-sodium vegetable broth
  • 1 cup bell peppers, chopped (mixed colors)
  • 1 large onion, chopped
  • 2 cups fresh spinach
  • Juice of 1 lime

Instructions

  1. Chop onions and bell peppers; grate ginger.
  2. Place chicken breasts at the bottom of the slow cooker. Sprinkle with minced garlic and grated ginger.
  3. Pour coconut milk and vegetable broth over the chicken gently.
  4. Add curry powder and chopped bell peppers; mix well without disturbing the chicken.
  5. Cover and cook on low for 6-8 hours or high for 3-4 hours until the chicken is fork-tender.
  6. In the last 15 minutes, stir in fresh spinach and lime juice.
