  • 2 tbsp fresh ginger, minced
  • 4 garlic cloves, minced
  • 1/2 cup low-sodium soy sauce
  • 1/4 cup dark brown sugar
  • 1/4 cup rice vinegar
  • 2 tbsp toasted sesame oil
  • 2 green onions, thinly sliced (for garnish)
  • red pepper flakes to taste (optional)

Instructions

  1. Prep your ingredients: Mince garlic and ginger.
  2. Optional: Sear the short ribs in a skillet over medium-high heat for 3-4 minutes until browned on all sides.
  3. In a bowl, whisk together soy sauce, brown sugar, rice vinegar, ginger, garlic, and sesame oil.
  4. Place short ribs in the slow cooker and pour the sauce over them.
  5. Cover and cook on low for 7-8 hours or high for 4-5 hours until tender.
  6. If desired, thicken the remaining sauce by simmering on the stovetop before drizzling over the ribs.
