  • 1 cup apricot preserves
  • 1/4 cup low-sodium soy sauce
  • 2 tbsp Dijon mustard
  • 1 tbsp grated fresh ginger
  • 3 garlic cloves, minced
  • Salt and pepper to taste
  • Cooked rice or steamed vegetables (optional)

Instructions

  1. Rinse and pat dry the chicken breasts.
  2. In a bowl, mix apricot preserves, soy sauce, Dijon mustard, ginger, garlic, salt, and pepper until smooth.
  3. Place chicken in the slow cooker and pour the sauce over it.
  4. Cover and cook on low for 6-7 hours or high for 3-4 hours.
  5. Check for doneness (165°F) about 30 minutes before serving; add veggies if desired.
