  • 8 oz penne pasta
  • 4 oz cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste

Instructions

  1. Prepare your ingredients: Chop onions and mince garlic. Boil water for pasta.
  2. Sauté the onion in olive oil over medium heat until translucent. Add garlic and sauté until fragrant.
  3. Brown the ground beef in the skillet, breaking it up until fully cooked. Drain excess fat if needed.
  4. Stir in the Rotel tomatoes along with chili powder and cumin; let simmer for about 5 minutes.
  5. Reduce heat to low and mix in cream cheese until melted and creamy.
  6. Add cooked pasta to the skillet and toss gently until well coated.
