  • 3/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/2 cup all-purpose flour
  • 1/4 cup unsweetened cocoa powder
  • 1 cup fresh cherries (halved)
  • 2 large eggs
  • 1 tsp vanilla extract
  • Pinch of salt
  • 1 tsp olive oil (for roasting cherries)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease an 8×8-inch baking pan.
  2. Spread halved cherries on a baking sheet, drizzle with olive oil, sprinkle with sugar, and roast for about 15 minutes until softened.
  3. In a saucepan over low heat, melt chopped dark chocolate and butter together until smooth.
  4. In a bowl, whisk together flour, cocoa powder, and salt.
  5. In a large mixing bowl, beat granulated sugar, brown sugar, eggs, and vanilla until fluffy. Gradually mix in the melted chocolate mixture.
  6. Fold in dry ingredients gently until just combined; then add roasted cherries.
  7. Pour batter into the prepared pan and bake for 25-30 minutes or until a toothpick comes out with moist crumbs.
