  • 1 medium butternut squash (about 2 cups cubed)
  • 1 cup tart apples (like Granny Smith), sliced
  • 8 oz fresh burrata cheese
  • 1 lb pizza dough
  • 2 tbsp extra virgin olive oil
  • 1 tsp fresh rosemary, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Peel and cube the butternut squash.
  2. Toss the squash with olive oil, salt, pepper, and half of the rosemary on a baking sheet. Roast for about 25 minutes until golden brown.
  3. In a skillet over medium heat, sauté sliced apples in olive oil for about 5 minutes until softened.
  4. Roll out the pizza dough on a floured surface and place it on a baking sheet.
  5. Layer roasted squash and sautéed apples on the dough; tear burrata over the top.
  6. Bake for 15-20 minutes until golden brown and bubbly. Let cool slightly before slicing.
