  • 1/2 cup pure maple syrup
  • 1/2 cup brown sugar
  • 1 1/4 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 tsp salt
  • 1 large egg (room temperature)
  • 1 tsp vanilla extract
  • 1/4 cup unsalted butter, melted

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix together pumpkin purée, brown sugar, maple syrup, melted butter, egg, and vanilla extract until smooth.
  3. In another bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt. Gradually add to the wet mixture until just combined.
  4. Use a cookie scoop to drop dough onto lined baking sheets, spacing them out.
  5. Bake for 12–15 minutes until edges are lightly browned but centers remain soft. Cool on the baking sheet for five minutes before transferring to wire racks.
