- 4 medium flour tortillas
- 2 large Russet potatoes (about 1 lb)
- 1 cup shredded sharp cheddar cheese
- 1/2 medium onion, diced
- 1/4 cup fresh cilantro, chopped (optional)
- 1 tsp ground cumin
- 1 tsp paprika
- 2 tbsp vegetable oil (for frying)
- Salt to taste
Instructions
- Peel and dice the Russet potatoes into small cubes. Boil in salted water for about 15 minutes until fork-tender. Drain and let cool slightly.
- In a skillet over medium heat, add a splash of oil and sauté diced onions until translucent. Stir in cumin and paprika.
- In a bowl, mash the cooked potatoes lightly while mixing in sautéed onions and chopped cilantro. Season with salt.
- Heat another pan over medium heat. Layer half of each tortilla with potato mixture and sprinkle generously with cheese before folding.
- Add oil to the pan if necessary and fry each folded tortilla until golden brown and crispy—about 3-4 minutes per side.
- Slice the quesadillas into wedges and serve warm with salsa or guacamole.
