Description

  • 4 medium flour tortillas
  • 2 large Russet potatoes (about 1 lb)
  • 1 cup shredded sharp cheddar cheese
  • 1/2 medium onion, diced
  • 1/4 cup fresh cilantro, chopped (optional)
  • 1 tsp ground cumin
  • 1 tsp paprika
  • 2 tbsp vegetable oil (for frying)
  • Salt to taste

Instructions

  1. Peel and dice the Russet potatoes into small cubes. Boil in salted water for about 15 minutes until fork-tender. Drain and let cool slightly.
  2. In a skillet over medium heat, add a splash of oil and sauté diced onions until translucent. Stir in cumin and paprika.
  3. In a bowl, mash the cooked potatoes lightly while mixing in sautéed onions and chopped cilantro. Season with salt.
  4. Heat another pan over medium heat. Layer half of each tortilla with potato mixture and sprinkle generously with cheese before folding.
  5. Add oil to the pan if necessary and fry each folded tortilla until golden brown and crispy—about 3-4 minutes per side.
  6. Slice the quesadillas into wedges and serve warm with salsa or guacamole.
