- 2 tbsp vegetable oil (plus more for cooking)

Instructions

- In a skillet, heat 2 tablespoons of vegetable oil over medium heat. Sauté the chopped onion until translucent, about 5 minutes.
- Stir in cumin and chili powder with the onions, then add the boiled potatoes. Mash gently while adjusting seasoning with salt.
- Place a tortilla on a clean surface, spread the potato mixture on half, and top with shredded cheese before folding over.
- Heat more oil in the skillet over medium-high heat and cook each quesadilla for about 3-4 minutes per side until golden brown and crispy.
