  • 1 cup ricotta cheese
  • Zest of 1 lemon
  • 2 tbsp olive oil
  • 2 tsp fresh thyme or oregano (or mixed)
  • Salt and pepper to taste
  • 1/4 cup grated Parmesan cheese

Instructions

  2. 2. Roll out the pizza dough on a floured surface to about 12 inches in diameter.
  3. 3. In a bowl, mix ricotta cheese with lemon zest, salt, pepper, and half of the Parmesan until smooth.
  4. 4. Spread the ricotta mixture evenly over the rolled-out dough. Sprinkle fresh herbs generously.
  5. 5. Drizzle olive oil on top and sprinkle with remaining Parmesan.
  6. 6. Bake in the preheated oven for 12-15 minutes until golden brown.
  7. 7. Allow to cool slightly before slicing; add a squeeze of fresh lemon juice before serving.
