  • 1 lb thinly sliced ribeye steak
  • 1 cup diced bell peppers (mix of red and green)
  • 1 large sweet onion, sliced
  • 1 cup provolone cheese, shredded
  • 2 tbsp extra-virgin olive oil
  • Salt and pepper to taste
  • 2 cups cooked rice or quinoa

Instructions

  1. Slice ribeye steak against the grain into thin strips; chop bell peppers and onion.
  2. In a large skillet, heat olive oil over medium-high heat. Sauté onions until golden brown (about 5-7 minutes), then add bell peppers and cook until tender.
  3. Push vegetables aside in the skillet; add ribeye steak strips and sear for 3-4 minutes until browned.
  4. Season with salt and pepper, then mix everything together until steak reaches desired doneness.
  5. Lower heat slightly, layer provolone cheese on top of the mixture, cover with a lid, and let melt (about 2 minutes).
  6. Serve hot over a base of cooked rice or quinoa.
