Ingredients

  • 1 vanilla bean (split and seeds scraped)
  • 1 tablespoon gelatin powder
  • 1/4 cup cold water
  • 1 cup whole milk
  • Fresh berries (for topping)

Instructions

  1. Bloom gelatin by sprinkling it over cold water in a small bowl; let it sit for about 5 minutes.
  2. In a saucepan, heat heavy cream, sugar, and split vanilla bean over medium heat until steaming but not boiling (about 5 minutes).
  3. Remove from heat and stir in bloomed gelatin until fully dissolved.
  4. Pour the mixture into molds, leaving space at the top, and refrigerate for at least 4 hours or overnight.
  5. Once set, invert onto plates and top with fresh berries before serving.
