- 1 can (8 oz) pineapple rings, packed in juice
- 1/2 cup brown sugar, packed
- 1/4 cup unsalted butter, melted
- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 1 tsp baking powder
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 cup whole milk
Instructions
- Preheat your oven to 350°F (175°C). Grease a muffin tin with nonstick spray.
- In a small bowl, mix melted butter and brown sugar until smooth. Spoon into each muffin cup.
- Place one pineapple ring in each muffin cup on top of the sugar mixture.
- In a large bowl, beat softened butter and granulated sugar until creamy. Add eggs one at a time, then mix in vanilla.
- In another bowl, whisk flour and baking powder together. Gradually incorporate into the wet mixture along with milk until just combined.
- Pour batter over each pineapple ring, filling cups two-thirds full.
- Bake for 20–25 minutes or until golden brown and springy when touched. Let cool slightly before flipping onto a plate.
