  • 1 can (8 oz) pineapple rings, packed in juice
  • 1/2 cup brown sugar, packed
  • 1/4 cup unsalted butter, melted
  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1 tsp baking powder
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup whole milk

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a muffin tin with nonstick spray.
  2. In a small bowl, mix melted butter and brown sugar until smooth. Spoon into each muffin cup.
  3. Place one pineapple ring in each muffin cup on top of the sugar mixture.
  4. In a large bowl, beat softened butter and granulated sugar until creamy. Add eggs one at a time, then mix in vanilla.
  5. In another bowl, whisk flour and baking powder together. Gradually incorporate into the wet mixture along with milk until just combined.
  6. Pour batter over each pineapple ring, filling cups two-thirds full.
  7. Bake for 20–25 minutes or until golden brown and springy when touched. Let cool slightly before flipping onto a plate.
